Chef Aj's Stompin' at the Savoy Sweet and Sour Cabbage Soup!

Today is a special day!
 
Celebrate this Triple Play with your family by making this 11 ingredient soup for the weekend and saving it for the coming week.
 
Today's recipe is  from Nutritarian Chef, AJ, who says this is a healthier version of the sweet and sour cabbage soup her Russian Grandmother would make on Friday nights!  Grandma said it was so good that it would even make Louis Armstrong Stomp!

Stompin' at the Savoy 

2 large onions, diced (4 cups)
1 cup carrots, sliced (6 carrots)
1 cup celery, diced (8 stalks)
1 pound mushrooms, sliced
8 cloves garlic, peeled and pressed
8 cups veg or chicken broth
2 cans diced tomatoes (14.5 oz. each)
1 can (6 oz) tomato paste
1 head Savoy Cabbage, shredded (10 c)
1 cup FRESH Basil chiffonade (ribbon slices)
4 Tablespoons Spicy Pecan Vinegar (More or less to taste.  Can be found with the vinegars at Publix.
 
Water saute onions until translucent. 
 
Add carrots, celery, garlie and mushrooms.  Cook  until soft.  (Adding more water if needed.)
 
Add water, and tomato products.  Bring to a boil.
 
Add Shredded Cabbage and cook over medium heat  afor about 8 minutes until cabbage becomes slightly softened.   (We like the cabbage crisp!)
 
Remove from heat and stir in fresh basil and vinegar.
 
Put some away for this next week!
